We are the Dixon family of Dixon Family
Meats - Home, where our story begins, overlooks one of those lush, green pastures and is also nestled in a section of one of the peaceful, wooded areas on our family’s rural Lawrence County, Tennessee, farm.
The psalmist writes in Psalm 50:1, 10-11:
We do sincerely believe, and live
accordingly, that “the thousand hills” and “the cattle” all belong to Him.
In light of this fact, we believe cattle should be managed in such a way
that they are allowed to thrive by doing what their Maker created them to
do
naturally:
roam and forage on those lush, green grasses that cover the land that
holds a special place
Free from unnatural stress-filled confinement situations, cattle roaming the pastures of our family’s farm are healthy and happy cattle! Did you know that research has proven that beef is consistently on the tender end of the scale when pre-slaughter stress is minimized? Many people assume that the degree of marbling in meat is a major determinant of tenderness. Research provides differently! Marbling accounts for only 10 percent of the variability in tenderness. There are numerous other factors involved, including the amount of stress animals are subjected to prior to slaughter. This accounts for the optimum tenderness of our beef at
